Behind the Gingerbread: Mike Floyd and Nancy Galli’s CabinsOffTheParkway Log Cabin

For this year’s Gingerbread House Contest, Mike Floyd and Nancy Galli of CabinsOffTheParkway created a gingerbread homage to their Buffalo Mountain-based business.

CabinsOffTheParkway offers rental log cabins on a gorgeous 100-acre property in Willis, just a short drive from Buffalo Mountain. All of the cabins were designed and built by Mike, with the most recent cabin built last year using salvaged American Chestnut logs from the 1930s. Two years ago, Mike and Nancy added a disc golf course onto their property, which has proven to be a fun addition to their business. Their course, Buffalo Mountain Disc Golf was designed by family friend Scott Snow and now hosts professional and amateur tournaments.

Mike and Nancy learned about the Gingerbread House Contest a few days before the deadline, so they hurried to plan their creation and bring it to life. They knew they wanted to make something that represented their business, so they scaled-down Mike’s cabin-building skills to build a lincoln-log-style gingerbread cabin.

“We wanted to do a log cabin gingerbread house to showcase that we enjoy welcoming people to Floyd and sharing our history with them,” says Nancy.

Their favorite part of the process was seeing the creation take form. Over the course of three days, they made their gingerbread dough, designed their template, and baked and decorated their gingerbread cabin.

“We really enjoyed making it from scratch,” Nancy says. “Before this, we always bought kits. It was so exciting to see it go from this sticky dough to a gingerbread house that we designed.”

There’s a lot of technical know-how in their cabin. For example, Mike chinked all of the pretzel poles. 

“He has log cabin making in his blood,” says Nancy.

Other key details include a panned rock candy stone chimney, a checkerboard thatched roof made of Frosted Flakes, a pond made of melted starlight mints, and of course, a disc golf basket made of candy and spaghetti.

“This was so much fun to do,” Nancy says, “and we hope it encourages people to come into Floyd to look at the gingerbread houses, because Floyd is such a great place.”
